Cavatappi w. Ricotta and Pozole

Pozole w or w. out Roasted Pork, Snug Haven Escarole Salad


  • Heat the soup gently and allow to simmer 3-5 minutes.

  • Dress the salad.



Cavatappi Arrabbiata w Ricotta, Roasted Red Onions & Sun Dried Tomatoes and Sicilian Roasted Cauliflower

  • Heat a little butter and or oil in a saute pan over medium heat. When hot add the cauliflower. Toss to dress well. Add a pinch of salt and toss again. Allow to heat through and finish cooking. Manage the heat so as to not burn the spices. A lid may speed the process, but can also make things a little soggy.

  • Transfer the pasta to a large serving bowl. Heat pasta in bursts in the microwave until hot.

  • Heat the red sauce in bursts in the microwave until hot.

  • Heat the ricotta mix in bursts too - but until just warm.

  • Fold the ricotta into the hot pasta and dress it well.

  • Serve the pasta/ ricotta mix topped with the red sauce and enjoy the cauliflower on the side.
