Meal 1: Bangain Bartha ( Eggplant-Tomato Curry), Green Lentils w. Leeks, and Kidgeree
· Warm the curries gently. Thin the bangain bartha a little with water if necessary and adjust the seasoning as needed.
· Sauté the kidgeree (rice and lentils) in a good portion of hot butter or oil. Stir and fry allowing it to brown a little and become fragrant.
· Serve all together.
Meal 2: Roasted Tomato Soup, Cheddar Bread, Mixed Greens Salad
· Heat the soup.
· Warm the bread.
· Dress the salad.
