Sloppy Joes and Red Lentil Soup




Sloppy Joes, Pan Roasted Potatoes, and Coleslaw w. Citrus Dressing


  • Warm the rolls.

  • Heat the Joe - a microwave is fine. Serve on the rolls - we like open face.

  • Toss the slaw mix with a pinch or two of salt, then dress with the included dressing. Serve.

  • Cut the potatoes crosswise into 'coins' about 3/8" thick. Heat a little oil and/or butter in a sauté pan. When hot add the potato pieces. Brown each side, season and serve hot. Expect 2 minutes per side over medium to medium high.


Red Lentil Soup, Spiced Flatbreads, Redleaf Lettuce Salad

  • Heat the soup gently and allow to simmer.

  • Toast the flatbreads: a dry or lightly oiled skillet, a toaster/ oven , or even over an open gas flame if you are comfortable with that. If you do toast them in oil, it is nice to cut the bread into quarters first and then toast up the pieces.

  • Dress the salad.
