Spinach Cannelloni and Onion Bhajis




Spinach Cannelloni and Marinara Sauce, Escarole Salad

  • Heat the spinach ricotta filling briefly in bursts in the microwave.

  • Ditto the marinara.

  • Carefully separate the crepes. There are 3 per share. Arrange the crepes on you work space. Divide the filling evenly among them, horizontally, just 'south' of the center line. Roll them up like fat cigars. Arrange in a baking dish. Top with the warmed marinara and bake 12-25 minutes at 350. Serve when hot.

  • Dress the salad and serve beside the cannelloni.


Onion Bhajis, Carrot and Cabbage Curry, Rice w. Lentils

  • Heat the curry very gently on the stovetop or in a microwave ( in bursts, stirring regularly).

  • Heat and oil a pan. When hot add the rice and toss. Allow to heat through, brown lightly and become fragrant. Use a lid an a tiny splash of water to speed the process. Transfer to a serving dish and hold warm.

  • Add a little salt to the onion bhaji batter and stir it in - it's the pale one with ribbons of onion and green cilantro in it. We did not salt it in order to prevent wateriness.

  • Reheat the pan over medium and cover the bottom with oil. When hot but not smoking, add smallish dollops of bhaji batter. Flatten the dollops and fry for about 2 minutes. Manage your heat appropriately to allow them to brown well without burning or getting pale and soggy. Turn, fry the other side - target a nicely browned doneness. Hopefully the video is useful.
