Spinach Cannelloni and Marinara Sauce, Escarole Salad
Heat the spinach ricotta filling briefly in bursts in the microwave.
Ditto the marinara.
Carefully separate the crepes. There are 3 per share. Arrange the crepes on you work space. Divide the filling evenly among them, horizontally, just 'south' of the center line. Roll them up like fat cigars. Arrange in a baking dish. Top with the warmed marinara and bake 12-25 minutes at 350. Serve when hot.
Dress the salad and serve beside the cannelloni.
Onion Bhajis, Carrot and Cabbage Curry, Rice w. Lentils
Heat the curry very gently on the stovetop or in a microwave ( in bursts, stirring regularly).
Heat and oil a pan. When hot add the rice and toss. Allow to heat through, brown lightly and become fragrant. Use a lid an a tiny splash of water to speed the process. Transfer to a serving dish and hold warm.
Add a little salt to the onion bhaji batter and stir it in - it's the pale one with ribbons of onion and green cilantro in it. We did not salt it in order to prevent wateriness.
Reheat the pan over medium and cover the bottom with oil. When hot but not smoking, add smallish dollops of bhaji batter. Flatten the dollops and fry for about 2 minutes. Manage your heat appropriately to allow them to brown well without burning or getting pale and soggy. Turn, fry the other side - target a nicely browned doneness. Hopefully the video is useful.
